Thai Cucumber Salad


This salad is a must when we cook Indian or Thai food, but I like it with anything grilled as well.
3 cucumbers, peeled, seeded, and chopped
1/3 cup white vinegar
1/4 sugar
1/4 water
1 teaspoon salt
1/2 an onion, chopped
1/2 cup roasted peanuts, chopped
1/4 cup cilantro, chopped
In a small saucepan, heat water, sugar, vinegar, and salt until sugar has dissolved. Cool. Pour over cucumber and onion. Stir in cilantro. Refrigerate. Add peanuts just before serving.

the japanese have a salad almost exactly like this, called sunomono, it's just equal parts water sugar and vinegar but then you add sesame seeds and crab meat. oh, and I use my mandolin to slice the cucs really thin. I think I'll try yours, Chris loves cilantro. Thanks!

Chris LOVES this recipe. The kids won't eat it, they don't like Cilantro, but he'll eat the whole batch.
